Cold Spinach Soup

1 onion, chopped fine
3 TBS. butter
2 10-oz. pks. frozen chopped spinach
3 cans chicken broth
1 TBS. paprika
2 8-oz. pks. cream cheese, softened
Salt and pepper to taste

Brown onion in butter. Set aside. Thaw spinach, drain and add to chicken broth with salt, pepper, and onion. Bring to a boil. Place mixture in blender and add cream cheese. Blend and chill. Serves 6 to 8 as first course of meal.
